In springtime, this is one of my favorite vegetable, ever since I learned how to cook it to perfection, not soft but a little crunchy.

A very versatile vegetable that can be eaten raw in salads, grilled on the bbq, sauteed, fried or steamed. And of course can be pureed for a simple and yet tasty soup.

It comes in several sizes, ranging in diameter from very thin to very fat.

So which size is best? In my opinion, it depends which recipe you intend to make.

For example, I will choose the thin raw ones to mix into my salad, but will use the fatter ones when grilling them on the bbq.

When buying them, choose bright green stalks and especially, look for tightly closed tips.

Freshness is the key, so try to cook them the same day you buy them.

The way to prepare your asparagus will depend upon its size. For the smallest spears, you only need to trim their bottoms off before cooking. For the larger ones, you will need to snap of the hard bottoms. Just hold the stalk with both hands and bend the bottom portion until it breaks off.
