Broccoli Pasta Salad

This broccoli pasta salad is great to bring along to a potluck gathering.
It's so easy to prepare, only 15 minutes!
If you don't have or can't find this pasta shape, try finding one that has lots of surface for the creamy dressing to stick to.
Broccoli Pasta Salad
What you need
- 1/2 package of 1lb(500g) of wagon wheel pasta
- 2 cups of broccoli flowerettes
- 1 stalk of celery thinly sliced
- 2 green onions sliced
- 1/4 sliced cucumber
- 2tbs fresh chopped parsley
- 1 cup of mayo
- 1/2 cup of sour cream
- 2 cloves of garlic finely chopped
- 2 tsp of mustard
- 1/2 tsp each of: paprika and salt
- 8 cherry tomatoes * cut in quarters
* I don't use the tomatoes but replace by radishes or red pepper
What to do
Preparation time: 15 minutes
Refrigeration: 2 hours

Cook the pasta according to instructions on the package and adding the broccoli 4 minutes before the end of the cooking time; drain.
Rinse under cold water to cool; drain well.
In a big bowl, add the pasta, broccoli, celery, green onions, cucumber and parsley.I add here also the veggies I used to replace the tomatoes
In another bowl, add together mayonnaise, sour cream, garlic, mustard, paprika and salt; mix well.
Pour over the pasta and veggies, mix to coat well.
Cover and refrigerate for 2 hours or overnight.
When ready to serve, add the tomatoes and mix slightly.
