Chicken Stew Recipe - in the slow cooker
I got this chicken stew recipe from Weight Watchers and it's delicious. It's very easy as you make it in the slow cooker.
Years ago, I did go on the Weight Watchers program for over a year and did loose 42lbs...sounds great I know, but my body was fighting me the whole time.
While others were loosing 3-4lbs a week, I could only manage 1lb and if I happened to shed 2lbs during a week, the next week, I wouldn't lose any!
I did gain it back over a period of 3 years and mainly because I couldn't exercise any more because of bad knees and for sure age...I hate that part.
Anyway, I discovered a few great recipes along the way and to this day still cook them because they are very tasty.
I don't normally like curry dishes but this chicken stew below has a very mild curry flavor and it is sweet and sour.
Only takes 10 minutes to prepare, serves 4 and cooks for 4 hours in your crock pot. My kind of cooking!
Sweet and Sour Chicken Stew
What you need
- 1 lb uncooked chicken breast, boneless and skinless, cut into 1-inch pieces
- 1 large green pepper, cut into 1-inch pieces
- 1 large vidalia onion, sliced
- 14 1/2 oz stewed tomatoes
- 1/2 cup mango chutney
- 1/4 cup water
- 2 tbsp cornstarch
- 1 1/2 tsp curry powder
What to do
Place chicken, pepper and onion in slow cooker, top with tomatoes.
Mix together remaining ingredients in a small bowl. Pour over chicken mixture.
Cover and cook on low heat for 4 hours.
