Classic Potato Salad Recipes

Let me give you a few classic potato salad recipes.
This simple dish is very popular at picnics, brunches, any kind of get together where food is involved.
It's easy to make and the usual ingredients would be potatoes, eggs, onion, celery, fresh dill, mayo, mustard, salt and pepper to taste.
The basic for all the recipes
Peel the potatoes. Dice in even bite sizes. Boil potatoes in enough water to cover until just barely done. Use a knife or open a piece to judge if done. Cool the potatoes.
Easy Potato Salad
What you need
- 10 large potatoes
- 5 eggs
- 2 cups of mayo
- 1/2 cup of bacon bits
- 1/4 cup of mustard
- large bowl
What to do
Cook the eggs and the potatoes, let cool.
In a large bowl, combine all ingredients except the bacon bits.
Make sure to mix gently, you don't want to end up with mash potatoes instead!
Put the salad in the fridge for about 2 hours.
Right before serving add the bacon bits.
If the salad is too dry, add more mayo. For every cup of mayo you add you need to add 1/8 cup of mustard.
Another Version of Potato Salad
What you need
- 5 to 6 medium potatoes,cubed and cooked
- 3 eggs, hard-boiled
- 1 cup mayonnaise
- 1 cup thinly sliced celery
- 1/2 cup chopped onion
- 2 tablespoons vinegar
- salt and pepper to taste
- 1 teaspoon sugar
What to do
Combine mayonnaise, vinegar, salt, sugar, and pepper in a large bowl.
Add remaining ingredients; toss gently to combine well.
Cover and chill for 2 or more hours for best results.
Serves 6 to 8.
TIPS
- The potatoes should be slightly undercooked otherwise they will be too mushy and will fall apart when you cut them
- Chop the onions very fine
- If the salad looks too dry, add more mayonnaise
- Sprinkle with paprika just before serving
