A Creamy Cole Slaw Recipe

I have to admit - I cheat when I prepare my coleslaw recipe.

If I don't feel like cutting a cabbage, I buy a bag of prepared slaw and a creamy dressing that is really good and the salad is done in under 5 minutes.

But since I'm here to share the coleslaw recipes in my box, we'll forget I said that!

Creamy Coleslaw Recipe No.1

What you need

  • 4 cups cabbage, shredded
  • 1 cup carrots, peeled and grated
  • 1/2 cup celery, sliced
  • 1/4 cup green onion, chopped
  • 1/2 cup of mayonnaise
  • 1/4 cup sweet pickle juice
  • 1 tbsp cider vinegar
  • 1 tsp Dijon mustard
  • 1/2 tsp celery seed
  • salt and pepper to taste

What to do

In a large bowl, combine cabbage, carrots, celery, and green onion.

In a small bowl, whisk together mayonnaise, pickle juice, vinegar, mustard, celery seed, salt and pepper.

Add to cabbage mixture and toss thoroughly.

Taste and adjust seasonings if necessary.

Cover and refrigerate 1 hour or until ready to serve.

Make 6 servings


Creamy Coleslaw Recipe No.2

What you need

  • 1 medium head green cabbage
  • 1 carrot, peeled and shredded
  • 1 tablespoon minced onion
  • 1 1/4 cup of mayonnaise
  • 1/3 cup sugar
  • 1/4 cup vinegar
  • 1/4 tsp celery seed
  • salt and pepper to taste

What to do

In a large bowl, shred cabbage and combine with carrot and onion.

In a small bowl, whisk together mayonnaise, sugar, vinegar, celery seed, salt and pepper. Taste and adjust seasonings if necessary, like adding more mayo or a bit more vinegar if too sweet for you.

Add to cabbage mixture and toss thoroughly.

Cover and refrigerate 1 hour or until ready to serve.

Serves 6 to 8
