Easy Chicken Parmesan Recipes
These easy chicken parmesan recipes are similar and yet different in the way they are cooked, one is baked (which is the one I like as I find it lighter) and the other one is pan fried.
Take your pick and let me know which one you like best.
This first easy chicken parmesan recipe comes from Chef Michael Smith, at Food Network.
Baked Chicken Parmesan
What you need
- 3 boneless, skinless chicken breasts
- 1/2 cup flour
- 2 eggs
- 1 cup Italian breadcrumbs
- 1/2 cup grated Parmesan cheese
- 3 tablespoons dried oregano
- Salt and pepper to taste
What to do
Preheat your oven to 375 degrees.
Prepare your breading ingredients: the flour into one bowl, the eggs into a second and the breadcrumbs, Parmesan, oregano, salt and pepper into a third.
To keep your hands from becoming breaded use one to handle the chicken while it is dry and the other hand while it is wet.
Cover the chicken with flour first, shake off any excess, then coat well with the egg. Drain well then plunk into the breadcrumbs. Make sure the chicken breast are well coated.
Place in a lightly oiled baking dish.
Bake until the chicken is golden on the outside and cooked through, about 25 minutes.
Serve with this tomato sauce or any other favorite one.
Easy Chicken Parmesan
with Fettucine
What you need
- 1 pkg. fettuccine noodles
- 4 boneless, skinless chicken breasts
- 1 cup flour
- salt and pepper to taste
- oregano to taste
- 2 eggs
- 2 tbsp. milk
- Parmesan cheese
- 4 mozzarella cheese slices
- Tomato sauce (homemade or jar)
What to do
In a large frying pan, heat 1/4 inch of oil(I prefer olive)
Wash chicken.
In one bowl, combine flour, salt, pepper and oregano. In separate bowl, whip eggs and milk.
Dip chicken in egg mixture then into flour mixture; then into egg mixture and flour mixture again. Repeat with each breast.
Add to frying pan and cook on medium heat until browned and cooked through.
Meanwhile, cook and drain noodles. Warm spaghetti sauce.
Set each plate by first adding noodles, then the chicken breast, then add some sauce, 1 slice of cheese and sprinkle with parmesan cheese.
