Easy Dessert Recipes
Everyone needs easy dessert recipes, unless of course you don't eat sweets! But what about when you have company? Surely, no meal is complete without some kind of dessert.
Ok, I have to admit I have a sweet tooth but I've been working on that.
If you think about it, you don't need even to bake a cake or a pie. There are plenty of fruit salad recipes to finish the meal in style.
Easy dessert recipes could also include simple cheesecake recipes or even pie if you buy the ready-to-cook crust (that's what I do) and don't have to try to roll the perfect dough without holes!
I dug into my recipe box and wanted to share my treasured selection of easy to make dessert recipes. Most of them are quick and easy but either need baking or refrigerating, so you have to take this time into consideration.
Easy Dessert Recipes
Magic Cookie Bar - My mother used to make these magic cookie bars and they never lasted very long.
My Easy Raspberry Scones - Maybe not a dessert recipe, but I eat them as such. You might prefer as an afternoon snack with tea or coffee. They are so delicious and so easy to bake.
Ambrosia Fruit Salad - This salad combines pineapple, mandarine and a few other ingredients to create this delightful dessert.
Easy Peanut Butter Cookies - These ridiculously easy peanut butter cookies only need 3 ingredients, that's right, can't get any easier and faster than that!

Pie Recipes
I am not very good at all at rolling a nice pie crust, I always have to patch the darn thing, so I gave up on it and now buy the frozen uncooked ones, and it works for me.
But if you want to try your hand at it, my brother gave me an easy pie crust recipe that you may want to try.

Anytime we have company, my first choice for a great, delicious, looks-like-I'm-a-good-baker kind of dessert is a melt-in-your-mouth cheesecake.
Recently, my daughter's new boyfriend came over for dinner and it's his favorite dessert. So I made an attempt to impress him (he's a great cook) with my raspberry cheesecake (recipe below) and I must say I'm proud of the results. The fact that most of the time graham crackers or cookies are used for the crust, is a very big plus for me, no dough to roll and in my case, patching the dough! Usually the trouble I have is with the sides, how do they manage to keep garnish there from falling?
