Light 'N' Easy Summer Salad
Even though this easy summer salad is great for picnics, it could also definitely become a favorite at any potluck party.

And I have to remember to take it out of the recipe box in winter as well. It's one of those salads that can go anywhere anytime.
It's light and could be a meal in itself if you don't feel like eating a lot.
What's left of your cabbage can be used in other recipes. No waste.
Light 'N' Easy Summer Salad
What you need
- l package Ramen noodles
- 4 cups shredded cabbage
- 4 chopped green onions
- 2 tbsp sesame seeds
- 2 tbsp sugar
- 2 tbsp oil
- 1/2 tsp pepper
- 1 1/2 tsp salt
- 1/2 cup slivered almonds
I have to confess a few things: I never use salt or pepper - I use olive oil - I sometimes buy the cabbage already shredded in a bag - I never have almonds around so I skip them - once I didn't have sesame seeds but I used my sesame oil instead
What to do
Empty the ramen noodles (except for the seasoning packet included) into a colander that you have previously set over a bowl. Break them up. Now pour hot water over the noodles and in the bowl and let them soak while you prepare the rest.
Mix the shredded cabbage and green onions with the seasoning packet that came with the ramen.
Now combine the noodle mixture with the rest of the ingredients and mix well.
It's ready to serve or you could refrigerate it for a little while.
Either way, it's 'way delicious'!
