Hot German Potato Salad

What you need

  • 4 red potatoes, cleaned and scrubbed
  • 4 slices bacon
  • 1/2 cup chopped green onions or any kind of onion
  • 1 tablespoon all-purpose flour
  • 2 tablespoons white sugar
  • 1/3 cup water
  • 1/4 cup white wine or white balsamic vinegar
  • salt and pepper to taste

What to do

Add potatoes to a pot of boiling salted water. Cook until tender about 15 minutes. Drain, cool and chop. Or do the reverse, chop them first before you boil them.

Cook bacon in a deep skillet over medium high heat until brown. Place on a paper towel to 'defat' then crumble. Keep the bacon fat in the pan.

Add the flour, sugar, water and vinegar to the pan with the bacon fat and cook over medium heat until it thickens.

Add bacon, potatoes and onions to skillet and gently stir until coated. Cook on low until heated through and season with salt and pepper.

Serve warm. Makes 4 servings.
