These two grilled vegetable recipes will surely become your favorites.

If you've never tried a grilled vegetable salad, you're in for a treat. Simple and yet very tasty.

If, like me, you live where winter comes along, you can grill the vegetables in the oven instead of the barbecue.

Grilled Vegetable Salad

What you need

  • 1 sweet red pepper, quartered
  • 2 zucchini, sliced lengthwise
  • 1 onion, thickly sliced
  • 2 tbsp vegetable oil
  • 2 cloves garlic, minced
  • 1/4 tsp each ground cumin, salt and pepper
  • 1/4 cup chopped french mint
  • 1 tbsp red wine vinegar

What to do

In a bowl, toss red pepper, zucchini, onion, oil, garlic, cumin, salt and pepper.

Place on greased grill over medium-high heat; close lid and cook, turning once, for 12 to 14 minutes or until tender.

Chop coarsely and return to bowl.

Toss with mint and vinegar.

Makes 4 servings.


Grilled Vegetable Salad with Goat Cheese

What you need

What to do

Mix vinegar, olive oil, Dijon mustard, origano, salt and pepper with the vegetables in a big bowl.

Let it stand 30 minutes, mixing often.

Grill the vegetables on the barbecue until tender.

Return the vegetables to a serving dish and crumble the goat cheese over them. The cheese will melt a little.
