Hamburger Soup Recipe

This hamburger soup recipe is so good, you'll want to double it, eat half and freeze the rest. It's a meal in a bowl.

Hamburger Soup Recipe

What you need

  • 1lb Ground Beef (I prefer lean)
  • mince garlic (in a jar) as much as you want
  • 2 onions chopped
  • 1 cup chopped celeri
  • a cup chopped carrots
  • 1 can (28oz/796ml) diced tomatoes
  • 1 can (14oz/398ml) kidney beans, drained
  • 8 cups of water, beef or vegetable stock
  • 2 cups shredded cabbage
  • 1/2 cup small pasta (macaroni, penne or fusili)
  • 1 can (14oz/398ml) pork and beans
  • 1 tsp dried basil or Italian seasoning
  • 1 tsp salt and pepper to taste

Optional: parmesan cheese to sprinkle on top

What to do

  • In a large heavy saucepan, brown beef until crumbly and fully cooked
  • Add garlic, onions, celery and carrots
  • Cook until softened but not browned
  • Add tomatoes, kidney beans and liquid
  • Bring to boil
  • Reduce heat, cover and simmer for 45 minutes
  • Add cabbage, pasta, pork and beans, basil, salt and pepper to taste
  • Cover and simmer additional 30 minutes or until soup is desired consistency
  • If you want, sprinkle parmesan on top
