Peanut Butter Chicken
You will love this peanut butter chicken, even if you don't like peanut butter..well that's what I was told. In my case and everyone else in this family, peanut butter is a favorite especially in a sauce.
The recipe calls for a whole chicken but I always use breasts instead. It works well with either.
Next time I make this dish, I will take a photo to post here. Always nice to have a visual.
Peanut Butter Chicken
What you need
- 1 cup (250ml) onion
- 1 clove garlic
- 1/4 cup (50ml) soy sauce
- 1/4 cup (50ml) peanut butter
- 2 tbsp (30ml) brown sugar
- 3 tbsp (45ml) lemon juice
- 1 tsp (5ml) ground coriander
- 1/4 tsp (1ml) cayenne
- 1 chicken (or 4 breasts)
I always at least double the sauce
What to do
- In a blender or food processor, whirl together all the ingredients except the chicken
- Dump this sauce into a large bowl
- Cut the chicken up into pieces and then plunk them in the bowl with the sauce
- Let marinate for 2 hours in the fridge
- Arrange the chicken in a baking dish
- Pour the sauce over
- Bake at 375° F (190° C) for about 45 minutes basting once in a while with the sauce
Makes 4 servings. Serve with rice or noodles.
