A Variety of Picnic Sandwiches

Are your picnic sandwiches boring? Maybe it's time to let your imagination go wild and create new sandwich ideas.

There is nothing wrong with the all-time favorites, like ham, chicken or egg salad sandwiches, but you can change a little something and make it 'inspired'.

Not only can you be adventurous with the filling but who says you have to stick with the traditional white or brown sliced bread?

Try these alternative: a crusty baguette, a ciabatta, a focaccia loaf, a pita, a wrap, a panini.

If you like green stuff in your sandwich, instead of iceburg lettuce, use arugula, spinach, watercress or sprouts.

It's better to prepare these below once you are at your picnic destination. They are easy and quick to make.

Some of my favorite picnic sandwiches

Cucumber Sandwich

Cut open a ciabatta, spread with cream cheese, pile it with thinly sliced cucumber and onion, add some sprouts and enjoy!

Avocado Sandwich

I love avocado and when I find a nice ripe one, I like to mash it up with a fork, add finely chopped onion, chopped fresh coriander and mayo. Then spread it in between 2 slices of fresh baked bread (from the bakery).

A new twist on egg sandwich - from Canadian Living magazine

Spread a ciabatta bun with some herbed mayo*. Layer with 2 sliced hard-cooked eggs, some alfalfa sprouts and some lettuce leaves.

*In bowl whisk 1/2 cup (125 mL) mayo with 2 tbsp (25 mL) each chopped fresh chives and basil. Makes about 2/3 cup (150 mL).

Red Pepper Sandwich

Spread a crusty sub bun (like they use for a sub) with ricotta cheese. Add sliced roasted red peppers(from a jar), and watercress leaves.
