Red Potato Salad Recipe

Creamy Red Potato Salad Recipe
What you need
- 2 pounds new red potatoes, cleaned and scrubbed
- 6 eggs
- 1 pound bacon
- 1 onion, finely chopped
- 1 stalk celery, finely chopped
- 2 cups mayonnaise
- salt and pepper to taste
What to do
Bring a large pot of salted water to a boil. Add potatoes to a large pot of salted boiling water and cook for about 15 minutes. They should be tender but still firm so they don't fall apart. When done, drain and store in the fridge until cooled.
While they are cooking, add eggs to a pan, and cover with cold water. Bring to a boil and remove immediately from heat. Cover again and let stand in the hot water for 10 minutes. They are now cooked and you can remove them from the water to let them cool. Then peel and chop.
Cook bacon in a large frying pan over medium high heat until brown. Drain, crumble and set aside.
It's now time to chop the potatoes. Remember to leave the skin on.
Add all the above ingredients to a large bowl and gently mix.
Leave in the fridge for an hour before serving.
Makes 12 servings.
