My Easy Shepherds Pie Recipe

My shepherds pie recipe is very easy and only needs 3 ingredients. It's at the top of my list of ground beef casserole recipes. I make it at least every 2 weeks. It's my husband's favorite and a time saver.

My mother used to make it with left over roast beef, yerk! Never liked it and swore I would not follow her recipe when I was older and cooking for myself. I kept my promise.

There are variations to this dish as far as ingredients are concerned but also in what it's called around the world.

According to wikipedia:

in Australia, it's called cottage pie. But it's also known as a potato pie. In New Zealand, they call it a potato top pie.

In the United States a similar dish is called cowboy pie. In New England the most common recipe for shepherd's pie consists of ground beef, canned creamed corn, and mashed potatoes.

In France, a similar dish is called hachis parmentier.

In Quebec, we called it pâté chinois (Chinese pie). No idea why we call it that, there is nothing Chinese about it or in it. Eventhough I live in Quebec, I use the New England version for my shepherds pie.

A vegetarian version can be made using soya or other meat substitutes.

My Shepherds Pie Recipe

What you need
Serves 4

  • 1.5 pound extra lean ground beef
  • about 3 cups of mashed potatoes
  • a 19oz can of creamed corn

What to do

  • Peel potatoes and boil till cooked and mash
  • Or a faster way is to use mashed potatoes in a box - cooks in the microwave for 6 minutes according to directions
  • Add PAM to a frying pan and heat it on high
  • When pan is hot add the ground beef
  • Break up in small pieces and stir often
  • Preheat oven at 400F
  • Make sure the beef is fully cooked, no more pink anywhere
  • Set the cooked ground beef in the bottom of a casserole dish
  • Cover with the creamed corn
  • Top it off evenly with the mashed potatoes
  • Bake in the oven for 30 minutes
